Chocolate, Oat & Tahini Slice

Silky dark chocolate and nutty tahini come together beautifully in this simple to make dairy free snack. Try using gluten free oats if you have intolerances in your house.

Ingredients (makes around 16 slices)

250g rolled oats

1/2 tsp good sea salt,

Maldon or similar

120g coconut oil, melted

for the filling:

2 tbsp honey

150g dark chocolate, 70%

120g tahini

2 tbsp honey

Steps:

In a bowl over gently simmering water, melt the chocolate. Add the tahini and honey and set aside.

In a separate bowl mix together the oats, honey & the melted coconut oil until damp and well coated. Toast gently on a roasting tray in the oven at 155c. Stirring regularly until lightly golden all over. Take out of the oven and set aside.

Line an 18cm* tin or casserole dish with parchment paper so that the paper hangs over the sides of the dish. We are going to press the slice mix into the tin so we want enough parchment to be able to fold over the top.

Add 2/3rds of the oat mix to the bottom of the lined tray. Drizzle the chocolate filling until it forms an even layer over the toasted oats. Sprinkle the remaining oats over the top, wrap the parchment over and place in the fridge to set for an hour or so.

Once the mix is firm to the touch, turn out onto a chopping board and slice or break off into bite size pieces.

The mix should make at least 16 bars but the crumbly trimmings can also be used to add to fruit & yogurt bowls.

*You can use any type of dish to set your bars in, around 15-18cm is totally fine.
